Zucchini Carrot Bites
Soft and tender veggie fritters made with zucchini and carrot. These are perfect for little hands and mouths, offering a gentle way to introduce new textures and flavors.
Ingredients
- 1/2 cup grated zucchini (about half a small zucchini)
- 1/4 cup grated carrot
- 1 small egg
- 2 tablespoons all-purpose flour (or whole wheat flour)
- 1 tablespoon finely chopped onion or chives (optional)
- 1 teaspoon olive oil
Instructions
Wash and peel the carrot. Wash the zucchini.
Grate the zucchini and carrot using the fine side of a grater.
If the grated zucchini seems very watery, gently squeeze out excess moisture with a paper towel. A little moisture is okay!
In a small bowl, crack the egg and whisk it lightly with a fork.
Add the flour to the bowl with the egg. Stir until just combined. Don't overmix!
Add the grated zucchini, grated carrot, and finely chopped onion or chives (if using) to the bowl.
Mix all the ingredients together until well combined. The mixture should be thick enough to hold its shape slightly. If it's too runny, add a tiny bit more flour (1/2 teaspoon at a time). If too thick, add a teaspoon of water.
Heat the olive oil in a non-stick skillet over medium heat.
Once the oil is hot, drop spoonfuls (about 1 tablespoon each) of the zucchini-carrot mixture into the skillet, gently flattening each one with the back of the spoon to form small patties.
Cook for about 2-3 minutes on one side, until the bottom is golden brown and set.
Carefully flip the fritters with a spatula and cook for another 2-3 minutes on the other side, until golden brown and cooked through. Make sure the egg is fully cooked and there are no raw batter spots inside.
Remove the fritters from the skillet and place them on a plate lined with paper towels to drain any excess oil.
Let the fritters cool completely before serving to your little one. Cut into smaller, manageable pieces or strips if needed.
