Apricot Sunshine Purée
A naturally sweet and creamy purée made with soft apricots, ripe banana, and a hint of cinnamon, perfect for a nutritious treat or addition to meals.
Ingredients
- 4 dried apricot halves (unsulfured preferred)
- 1/2 ripe banana
- 1/2 cup water
- Pinch of cinnamon
Instructions
Gather all ingredients: dried apricots, ripe banana, water, and cinnamon.
Place the dried apricots in a small saucepan.
Pour 1/2 cup of water into the saucepan with the apricots.
Bring the water to a boil over medium heat.
Once boiling, reduce the heat to low and simmer for 5 minutes, or until the apricots are plump and very soft. Alternatively, soak in hot water for 10 minutes.
Carefully transfer the softened apricots and 1-2 tablespoons of the soaking water to a blender or food processor.
Peel the 1/2 ripe banana and add it to the blender with the apricots.
Add a pinch of cinnamon to the blender.
Blend the mixture until completely smooth. If the purée is too thick, add a little more of the soaking water, one teaspoon at a time, until you reach the desired consistency.
Check the purée for any small pieces. If necessary, blend for a few more seconds until completely smooth.
Transfer the Apricot Sunshine Purée to a bowl or small containers.
Allow the purée to cool slightly before serving to your baby.
Serve as a treat, mix into cereal, or add to yogurt.
Store any leftover purée in an airtight container in the refrigerator for up to 2 days, or freeze in portions for later use.
