Banana-Oat Mini Pancakes (Finger Food)
Soft and simple mini pancakes made with banana, egg, and oats, perfect for babies to self-feed. These are a nutritious and delicious finger food for breakfast or snack time.
Ingredients
- 1 ripe banana
- 1 large egg
- 2 tablespoons finely ground oats (or oat flour)
- Pinch of cinnamon (optional)
- Tiny brush of oil or butter (optional, for the pan)
Instructions
Step 1: Mash the ripe banana in a bowl until it is very smooth with no large lumps.
Step 2: Crack the egg into the bowl with the mashed banana.
Step 3: Whisk the banana and egg together until they are well combined and the mixture is smooth.
Step 4: Add the finely ground oats (or oat flour) to the banana and egg mixture.
Step 5: If desired, add a pinch of cinnamon for flavor.
Step 6: Stir all the ingredients together until just combined. The batter will be a bit lumpy from the banana and slightly runny. That's okay!
Step 7: Let the batter sit for 2 minutes to allow the oats to soften slightly.
Step 8: Heat a non-stick pan over medium-low heat. If needed, lightly brush the pan with a tiny amount of oil or butter to prevent sticking. Wipe off any excess oil/butter.
Step 9: Pour tablespoons of batter onto the hot pan to form small pancakes, about 2-3 inches in diameter.
Step 10: Cook the pancakes for about 1-2 minutes, or until you see bubbles forming on the surface and the bottom is lightly golden brown. Watch carefully to prevent burning, as the banana sugars can cause them to brown quickly. Reduce heat if necessary.
Step 11: Gently flip the pancakes with a spatula.
Step 12: Cook for another 1-2 minutes on the other side, until golden brown and cooked through. They should feel slightly firm to the touch.
Step 13: Remove the cooked pancakes from the pan and place them on a plate to cool.
Step 14: Let the pancakes cool to a warm temperature before serving.
Step 15: Cut the pancakes into strips or small bite-sized pieces suitable for your baby's age and developmental stage. Serve as finger food.
