Cheeky Chicken Bites (Baked)
Soft and tender baked chicken bites coated in crunchy cornflake crumbs. A fun and healthy way for little ones to enjoy chicken, perfect for practicing self-feeding!
Ingredients
- 4 oz (115g) boneless, skinless chicken breast or thigh
- 1/2 cup unsweetened cornflakes, finely crushed
- 1 tablespoon all-purpose flour (optional, can use more cornflakes instead)
- 1 large egg, beaten (optional)
- 1 teaspoon olive oil
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or grease it lightly with olive oil.
Cut the chicken into small, bite-sized pieces, about 1-inch cubes or strips. Pat the chicken pieces dry with a paper towel.
If using flour, place it in a small, shallow dish.
If using egg, place the beaten egg in a separate small, shallow dish.
Place the crushed cornflakes in a third small, shallow dish.
If using flour, lightly coat each chicken piece in flour, shaking off any excess. This helps the egg and cornflakes stick better.
Dip the floured (or plain) chicken piece into the beaten egg, letting any excess egg drip off.
Roll the chicken piece in the crushed cornflakes, making sure it's completely coated on all sides. Gently press the cornflakes onto the chicken to help them adhere.
Place the breaded chicken pieces onto the prepared baking sheet, leaving a little space between each piece.
Drizzle the chicken pieces with a teaspoon of olive oil, or lightly spray them with cooking spray. This will help them get crispy in the oven.
Bake for 12-15 minutes, flipping the chicken pieces halfway through, until they are golden brown and cooked through. The internal temperature should reach 165°F (74°C).
Remove the baking sheet from the oven and let the chicken bites cool slightly before serving. This will prevent burns.
Check the chicken bites are cool enough for baby to eat, and cut into smaller pieces if needed. Always supervise your child while they are eating.
